One of my very favorite treats is caramel popcorn. Really, if it involves caramel… I like it. A LOT. This is my favorite recipe for popcorn. (There are many kinds of caramel for many kinds of foods ;)) It comes from a family cookbook that I got from my friend Alysha. (It has lots of great recipes in it!)
- 1 cup unpopped corn
- 2 cups brown sugar
- 1 cup butter
- 1/2 cup corn syrup
- 1 tsp vanilla
- 1/2 tsp baking soda
- Pop corn and put in a large mixing bowl.
- Bring butter, sugar and corn syrup to a boil slightly, only until sugar dissolves.
- Remove from heat and add vanilla and baking soda.
- Pour over popped corn.
- * If you want the caramel to stay soft and sticky, then take it off the heat immediately after the first bubbles. If you want it to be harder then let it boil a little bit longer!
