Alden was doing some service at an older lady’s home and she fed him these cookies. He hasn’t stopped talking about them since.
So naturally, I had to phone and get the recipe. She told me it is a very old recipe and that he and his two friends he took to help her each ate half a dozen.

Cowboy Cookies
Ingredients
- 2 cups shortening
- 2 cups white sugar
- 2 cups brown sugar
- 1 tsp vanilla
- 4 eggs
- 2 tsp baking soda
- 2 tsp baking powder
- 4 cups all-purpose flour
- 1 tsp salt
- 3 cups oatmeal
- 2 cups coconut
- 2 pkgs butterscotch chips
Instructions
- Preheat oven to 350F. Cream shortening and both sugars until light and fluffy. Add eggs and vanilla and mix well.
- Add dry ingredients (except the chips). Mix to combine. Add in butterscotch chips and mix just until combined.
- Scoop cookies onto parchment lined cookie sheets. Bake for 8 minutes.
